At the start of 2026, sourdough is reaching new heights in popularity, and so is interest in making your own.

If you’re among those baking some new habits into your life via flour and yeast, here are a few ways to get in on the action in Charleston:
  • Let expert instructors guide you at The Chef’s Collective, who are ready to get hands-on and give you all the info you need to start your sourdough journey.
  • Beginners are also welcome at Moonrise Sourdough, as are more seasoned bakers. In 4.5 hours, you’ll have the basics down, and you’ll get to sample your work before you leave.
For those who prefer their loaves made by an expert, there are a bunch of spots around town to get your fill of doughy goodness. We’re fans of Baguette Magic’s daily-baked loaves, the rotating specialty sourdough at Grit Bakery, and the Lowcountry-inspired benne seed sourdough at Welton’s Tiny Bakeshop.

News Notes

Closing

A North Charleston staple is closing its salt and vinegar-infused doors after a decade in business. The CODfather Proper Fish & Chips will close soon after owners sell the building, per Post and Courier reporting. The owner says it’s not because of a lack of customers — he’s leaving the industry.

Civic

Voters are heading to the polls in North Charleston’s District 1 today to fill a vacant council seat. There are six candidates vying for the position, and polls are open until 7 p.m. (WCBD)

Announced

The final phase of renovations will begin on Charleston’s Main Library later this year, 12 years after the project was initially approved. Officials say the library will close in the fall for the work, at which time operations will temporarily move to 1142 Morrison Dr. (WCBD)
Elsewhere in the Lowcountry, new life is emerging ahead of the spring. A convocation of bald eagle eaglets was recently born on Hilton Head Island, as evidenced by footage from a live camera documenting activity in the nest.

Real Estate

An abandoned kindergarten building is up for grabs in Harleston Village. The property at 34 Pitt St. has been vacant since the early 2000s, and is now accepting bids starting at $1.45 million. Interested? You have until Friday, Feb. 6 to tour the place. (Post and Courier)

Watch

Anyone fancy a morning swim? These local bottlenose dolphins have no choice — they’re hungry and it’s time for breakfast.

Post of the Day

A screenshot of an Instagram post by Charleston Daily, showing a foggy morning at Folly Beach. A wooden boardwalk stretches into the distance with fog hiding the end of it. It is creepy.

When you see photos like these, the fact that South Carolina’s coast is littered with lighthouses and shipwrecks makes far more sense.

Do you know why the Lowcountry has so much fog? It’s because warm ocean air mixes with cooler land temperatures, and when you factor in high humidity after rain, it’s a perfect cocktail for fog to form and settle.

The Wrap

This will be the year I learn how to make bread (he said to himself for the fifth year in a row). I’m just putting it in writing here to increase the chances I hold myself accountable.

Does anyone have a good New Year’s resolution they’d like to share with the class? Let me know.
