The Cooper will debut as the peninsula’s first luxury waterfront hotel in March 2026

This spring, The Cooper, the city’s first luxury waterfront hotel, will open just steps away from Joe Riley Waterfront Park.

An elegant rooftop pool surrounded by palm trees, lounge chairs, and umbrellas overlooks a lush courtyard. The multi-level building features greenery-covered terraces, airy patios, and classic architecture bathed in sunlight.

Executive Chef Nick Dugan, who also serves Sorelle, will oversee The Cooper’s food and beverage concepts, which include:

The Crossing: This is the hotel’s signature restaurant, which blends Mediterranean flavors and Southern hospitality. This spot will have 196 seats, a bar, a raw bar, a private dining room, and a chef’s table.

CurrentBurger: Think classic soda shop, with a menu of smash burgers, fries, milkshakes, and ice cream. This spot will also have a walk-up window so you can take your food on the go.

Cooper Coffee & Wine: This all-day cafe will overlook The Cooper Marina, and offer coffee and breakfast in the morning, and become an intimate wine bar by evening.

Bar Marti: Located on the fourth floor, this will be a guests-only poolside bar and food spot.
