Pimento cheese — also known as the pâté of the south and Carolina caviar. It’s a staple here in the Lowcountry, typically made from cheese, mayonnaise, and pimentos. While the dip or spread can stand alone, it can take dishes, sandwiches, and even grits to the next level when generously dolloped on top.
